Valle d'Aosta Fromadzo DOP is a semi-fat cheese obtained from raw milk, partially skimmed by natural surfacing, coming from two milkings of spotted red and brown cows of the Valle d'Aosta breed.
PASTURES AND BREEDING
The milk produced in Val d'Ayas comes from small farms, where passionate Alpine farmers look after their cows. In summer the cows graze in the mountain pastures and graze fresh and aromatic herbs (true mines of biodiversity and nutrients); during the long winters, farmers administer the hay collected during the summer in the valley bottom.
PRODUCTION AND REFINING
The fresh milk is delivered daily to the cooperative and placed in surfacing tanks (in the morning for 24 hours and in the evening for 12 hours) for skimming the cream which will be used to produce excellent butter. The partially skimmed milk from the two milkings is combined to start the transformation process. The maturation takes place in cool, humid cellars where salting with brine and subsequent brushing is carried out for a minimum period of 60 days.
